Update documentation flow chart in tutorial

For Lease and Book there’s an undocumented “UpdateLease” and “UpdateOrder” hook that happens right at the end of the flow chart

Also include documentation in code and tutorial that when building Book that if a lease doesn’t exist it should attempt to book anyway
