Description

add example of default instance config
fix wrong namespace/project from "opendatahub-system" to "opendatahub"

Overall, should this be more clearly marked as waiting for 2.2 availability, to avoid getting merge prematurely?

this PR will be merged once 2.2 is released and available from opendatahub
