Updates changelog with release version and date #673

@segator this updates the CHANGELOG with today date and version 3.0.1 To release this version, just approve the PR, merge it and then add to the branch 3.0.x a tag named "v3.0.1" -> this will trigger the build and push of the docker image to dockerhub.
