fix: Update kind to Component in catalog-info #446

I've been confused about the meanings of these kind categories, especially for oddball repos like this one. What was the reason for this change?

The most I understand is that these words mean something specific to Backstage, which isn't the same as my interpretation was. Feanil updated the template to help more people like me: https://github.com/openedx/open-edx-proposals/pull/447/files
