I added labels to all the "onboarding" course items, and added some filter views on the kanban board https://github.com/orgs/openedx/projects/15

Go nuts with adding extra fields and extra filter views.

@jalondonot we also agreed on using extra fields / labels for categorizing the issues on the kanban board instead of milestones. Those are easier to use and understand than milestones
