feat: Nicer formatting for training stats plot

Changes:

Add plot_training_stats helper function to plot all stats at once.
Use integer scale for x-axis (epoch).
Vertically center legend to minimize overlap with plotted curves, since metrics should converge to either upper- or lower- right.
Remove redundant y-axis label, already used as plot title.
