Show how much of the 100 g is not in the nutritional values
For example, this butter http://world.openfoodfacts.org/product/4607053477306
Fat: 72.5 g
Carbohydrate: 1.4 g
Proteins: 1 g

Add: "* the rest: 25,1 g".

A complication: http://world.openfoodfacts.org/product/0633982100026 lists "Dietary fiber" under "Carbohydrates", but OFF counts it separately, resulting in a total of 101.6604 g.

Fiber under carbohydrates is the US style. Maybe you need a switch for this on the edit-page.

If the total is not 100%, what is the rest? Water?

Water, dietary fiber (e.g. non-carbohydrate one), maybe bones.

My proposal would be contacting manufacturers and ask them directly to see what we miss. If you find products from France with that issue, I'll do it.

Oh yeah, my bad, I was looking at portion instead of 100g
