Description

Updates docs with spelling, style, and clarity improvements, Markdown parsing with MyST, and the OpenFF theme.

I'd like to get this merged before I work on writing a user guide. Supersedes #146.

[x] Move RTD environment to conda_envs directory
[x] Add auto-generated API docs to .gitignore
