feat(logging): replace winston with pino #227

Problem

Closes #184

Solution

Use pino for logging, giving us better logging performance and JSON-first log messages, which are better handled in production by log-processing systems like CloudWatch and Datadog.

Help developers to read and handle logs in development environments with pino-pretty.

npm install pino pino-pretty && npm remove winston
Rework logging infrastructure to adapt to pino
