Update transformation docs for script profile changes & Clean-Up addons folder

• Update the script profile docs, refs https://github.com/openhab/openhab-core/pull/4058.
• Move actions.md from addons to configuration folder. This was done by the build scripts until now.
• Clean-up the addons folder: Remove .md files which are not picked up by the build script and also very outdated (they refer to openHAB 1 and 2 and seem to use some old Jekyll stuff.)

This will require a change to the website build script, I will create a PR for that.
