fix: setting standard contracts to be auto deployed

Proposed Changes

• Disabled utility, adapter, extension, and factory contracts that don't need to be auto-deployed (Goerli & Mainnet)
• Bump ethers-gcp-kms-signer to v1.1.5 to enable credentials via env vars
