Add Fedora 39 and Fedora 40 json files #64

Fedora 39 and Fedora 40 have support for s390x, so we should add a data file and script support for it as well.

The script has been updated thanks to https://github.com/openmainframeproject/software-discovery-tool/pull/182

We should remove the End of Life ones as well, versions 34, 35, 36, & 37
