Document hiking networks #73

This provides a documentation update based on openmaptiles/openmaptiles#1169, which added hiking network information to the transportation layers.

Note that I am not sure why the diff is misbehaving, and it would be great if someone could help me figure out how to make this PR clean.

Hi, thanks for contributing. We are publishing here just the latest version that was released. So we will update all layers together after release 3.13 also with your changes.

Hi @daliborjanak, I closed the PR that this referenced in order to re-work it, so this documentation change is not ready to include anyways :)
