Removing out of date schema editing guidance #76

It's because this issue (https://github.com/openownership/data-standard/issues/375) has been resolved, I think, that Emma and I didn't need to make any of the edits mentioned in the ReadMe. In which case the ReadMe text can be edited as per this PR.

Assigning to @odscjames for review, who'll know if that's right.

This still applies when compiling V0.2 so don't want to approve as is.
