MAINT: Remove DDHN remains #79

moved role ansible/roles/ddhn.setup to ansible/roles/viper.setup;
changed ansible role and variable names from ddhn to viper;
updated references to ddhn-forge so that they now read ViPER; and
updated documentation site reference in README.md.
