MAINT: Update Maven dependencies

• updated library dependencies where safe to do so;
• removed lifecycle-mapping-plugin for Eclipse;
• hunted out hard-coded versions in pom.xml files and replaced with properties;
• removed redundant jwat.version property; and
• fixed license header typo.
