Update/change sphinx theme? #337

We may wish to consider updating the look of the Sphinx site for the 3.0 release, and move on from the standard readthedocs theme. Custom themes are a fair bit of work, but there a range of potential off the shelf themes that we could also consider. Thoughts welcome.
