This is a great question and we have some work to do in the docs to make this clearer but organization_id is the join for the tabular data and is a uuid which is different from the id of the entry in the object. Each log has multiple ids, so organization_id is a foreign key. The identifier_scheme is org-id, identifier_type is a human-readable version of identifier_scheme.
There may be cases where org-id doesn't cover the scheme. The Identifier is the actual identifier string e.g. a COH number. There's a question around whether we include the prefix or not which is an open question.
