Update versions in docs to remove explicit versions #291

Throughout our docs we provide many explicit versions for libraries. It's nearly impossible to ensure they're all up-to-date given GitBooks limitations. We should update the docs to use LATEST or latest.release throughout.

This is no longer needed now that we're moving to Docusaurus. Closing.
