Clean up check spelling #307

Now that we've migrated to the new docs and have a new structure, we should clean up our check spelling workflow. It has a variety of words and directories that no longer exist.

check spelling also opened a security issue - but it's just because of a bad entry in the expected spelling file: https://github.com/openrewrite/rewrite-docs/security/code-scanning/6068 - we should resolve that as part of this.
