Add more detailed documentation of the data model that we're sending to honeycomb #94

We'd like to help people on tech support (and members of the tech team in general) make better use of Honeycomb. One way to do that is to create some more detail documentation of the data model that we're sending to Honeycomb. So that people using Honeycomb can have a better understanding of the data that's there.
