Refresh Sample Data #1869

As OpenSearch evolves, the nature of our sample data should also evolve. Let's start thinking about a new set of sample data for our community to use and test.

There are two kind of sample data:

Huy is working on the plugin related work, he writing the tooling for generating plugin sample data/ ingesting data/create plugin component, which can cover the plugin sample data refresh.

Let's add an observability data set as well. This will make it easier to get started with and demo the Observability plugin.

Note that as part of 2.10, we updated the sample data images for the new theme, and also added a new "Visual Consistency" dashboard to the logs sample dataset which contains one of every chart type, implemented in each of the visualization systems that support that type.

@joshuarrrr I'd like to prioritize content gaps documentation. With these updates for 2.10, I expect to have updates to the visualizations documentation, including Gantt charts, which currently has inaccurate information. Please let me know if you have a particular set of visualizations I should prioritize first. Thanks, Melissa
