Release 2.3.0 #181

Hello there,

Based on the discussion and suggestions here: #155 I'm proposing a new release that would include this PR #161, which adds format support to the SQL API.

@shyim @harshavamsi So how does one actually release this client? :) We should update https://github.com/opensearch-project/opensearch-php/blob/main/RELEASING.md just like other clients (e.g. python). We also had https://github.com/opensearch-project/opensearch-php/issues/77 to this effect.

Let's make it 2.3.0 since we have new features.

Hey there, any update on this? I know you guys must be busy, and I don't want to be a nuisance, but I could really use that new option. I believe the case is the same for some of the others as well.

The GitHub automation had failed, but the release automation did work. I manually released 2.3.0 on GitHub now, and @gaiksaya fixed automation for next time in #189 (thanks!).
