Add OpenSearch 2.11.1 integration tests.

Description

• Added 2.11.1 per https://github.com/opensearch-project/opensearch-py/issues/582#issuecomment-1812154457.
• Excluded flaky setups reported in https://github.com/opensearch-project/opensearch-py/issues/612. The main purpose of testing against these versions is to avoid breaking API compatibility, which is ensured by running tests w/o security plugin.
