LOG-1075: Update Prometheus plugin to custom release 6.8.1.1 #2160

Description

Update Prometheus exporter to a new minor release that provides additional Index level metrics. As of now the implementation is very OCP specific which means that we were not able to contribute the code to upstream yet. This means that this minor release has been made from custom branch of repo clone, specifically from https://github.com/lukas-vlcek/elasticsearch-prometheus-exporter/tree/6.8.1.1
