Adjust variable names for all datasets. #15

Adjust variable labels on all datasests to 1 line labels and set Axis labels to Graph Labels as indicated below. Some of the existing labels are incorrect.

Let's change PaleoCAR Niche to "Proportion in Niche"

There is a limit with what I can do on the current system. Xingchen is going to use the variable name from the dataset rather than the directory name used when graphing.

In version 0.1.22 (which is out on DockerHub now), the chart is using the exact same text for the variable names in the side panel.
