Noticed various smaller issues with the docs, so decided to fix what I noticed.

docs: update install instructions

Update install instructions
- Add bundler exec before jekyll command to run the right version
- Without it, system-wide Jekyll would be run (and that wouldn't work)
Improvements to README.md
- Add type of Markdown code blocks for better syntax highlighting
- Spelling improvements
