fix: platform becomes pipeline dag #25

This PR renames the platform dag to unified_pipeline.

This is due to a bug @project-defiant has encountered when trying to run the dags locally to debug them. More info here.

The dag will eventually encompass the whole pipeline (platform and genetics), so it would have to be done eventually anyway.
