At the moment I have created goals on Google Analytics to track users signing up by tracking whenever someone visits the sign-up page, is taken to the confirm_email page (overlaps with the former) or is directed to the /o-auth page when signing up with Github or Gitlab (tracks when people log in and have already signed up). There are overlaps and I've used this as a temporary way to 'generally' track sign-ups (but it is ineffective).
I've talked with David and we thought it would be best to have a thanks.html page that all users are directed to (it could even skip straight past the page and not take them to any thank you page) so that I can effectively track all sign-ups by creating a goal that indicates when someone goes through the thanks.html page. This would include sign-ups from the /account/sign-up page, Github sign-ups, and Gitlab sign-ups.
