[invokers] update custom commands to use -- syntax #1076

This updates the invokers explainer to feature the -- syntax as resolved in https://github.com/openui/open-ui/issues/969#issuecomment-2251551230.

It also fixes a few missed conversions of camel-to-dash for built-ins.
