bump ensembl release version #261

105 is the latest release, while 104 is the currently enforced upper bound in the library.

Coverage remained the same at 79.963% when pulling 489498c75863d1caf26516e0551f5780a1ddf29d on jkasak:ensembl_version into 3fd9948ec6157db3061f74aa448fce1f1f914e98 on openvax:master.
