Fixes service "mediator-db" refers to undefined volume mediator-db: invalid compose project when trying to follow the QuickStart and run the command docker-compose -f docker-compose.demo.yml up

I'm going to go ahead and approve this - nice fix! I'm actually encountering some different more recent C++ errors that have broken the quickstart, but I will open a separate issue for this

I am also working on updating AFJ to Credo 0.5.3. I'll create a draft PR for that soon. Although, there are some issues that I am facing regarding issuance(which is still in ACA-py), I'll create a separate issue for that though.
