We cannot customize the Publisher ZIM metadata, it is forced to Kiwix, see https://github.com/openzim/gutenberg/blob/2fd98edaf40e393634a466231bae4b73b74d57c5/src/gutenberg2zim/shared.py#L44 This should be modifiable via a CLI argument.
