Harmonize Publisher #779

As per the spec, the Publisher metadata should be set to the Creator of the ZIM. Thus in our catalog, we should have openZIM everywhere (not Kiwix, notOpenzim nor OpenZIM) and maybe a couple exceptions.

Please:

check all recipes setting Publisher in Zimfarm and fix.
set a default value in Zimfarm for all scrapers.
Fix the default in all those scrapers' code?

Publisher is now an important piece of identification for ZIMs (in Offspot) so setting it properly should be integrated in your routine.

We (mostly I) will:

first, fix the default value in Zimfarm offliner definitions so that this is released fast
second, fix the default value in the scrapers

With https://github.com/openzim/zimfarm/pull/901, Zimfarm now sets publisher flag on scrapers which supports it (all but gutenberg when the PR was made).

In fact, gutenberg 2.1.1 was just released and it now supports the publisher flag, so I will fix the Zimfarm configuration to set the publisher flag in all scrapers now.

Should we also allow youzim.it users to customize the Publisher ? (for now it is "forced" to the default value openZIM)

I suppose the default should be forced to something different like youzim.it. As to allowing customization, why not. But all this is for @kelson42 to decide
