Fix #215

Minor additional changes:

update deprecated MAINTAINER to LABEL in docker images.
Change nginx port from 80 to 8080.

as the only image we note as for production use is "zipkin" I'm less concerned about root for the nginx especially if the alternative is moving it to port 8080 which will frequently conflict with local stuff. Can we unwind the port 80 on here? otherwise LGTM thanks!
