sets homedir for each non-root user #221

this reduces confusion. For example, the zipkin-aws missed reading profile config due to the mildy unintuitive difference between /home/zipkin and /zipkin where everything is.

added a README section for the zipkin image. I don't want to clutter the README with a separate one like it for each of the demo images.
