upgrade gatsby to v4 #371

we're currently using gatsby-2.0 while gatsby-4 is the latest.

and while we're at it, now that we want to restructure the site, maybe we want to switch to an easier maintainable theme?

How about a gatsby theme from themeforrest, like https://spet-gatsby.envytheme.com/ ?
