Add catalog pod scheduling config documentation #214

Description

This PR adds the end-user documentation for how to use the new grpcPodConfig attribute to configure CatalogSource pod scheduling. This PR also updates a ded lnik.

I need to look into why tide isn't merging optional checks (registry repository recently had an issue where it was gating PRs when the apidiff optional check was failing).
