QuickStart etcd subscription example is outdated #268

The etcd operator only supports up to K8s 1.21.0. This means the "quick start" is not so quick. It took me a while to understand that I couldn't get the quick start working because I am running K8s 1.25+, and I think it'd be easier to use a less limiting operator to understand how Operator works :)

I got the same issue.

Looks like it's the same issue with https://github.com/operator-framework/olm-docs/issues/241.
The problem is that etcd operator in example relies on apiextensions.k8s.io/v1beta1, which is removed in k8s v1.22 in August 2021

So it's been more a year and half not updating the broken "quick start" page. It gives me a strong feeling that OLM is basically abandoned maintaining the documentation.
