With merge of https://github.com/operator-framework/operator-registry/pull/1335 there is an explicit schema defining all catalog templates, so this includes updates to document format and processing changes.
(NB: the examples are sorted for human eyeballs, since go will generally sort all map keys in alpha order which can be a little tougher to read)
