docs: cleanup README regarding old DTrace versions #77

Regarding https://github.com/oracle/dtrace-utils/tree/devel?tab=readme-ov-file#7-building-previous-releases-of-dtrace, I think there's some risk of confusing people.

I think it'd make sense to keep that section heading, but punt the contents into another markdown file and link to it.

People will skim READMEs and it's best to minimise the risk of confusion.

Good suggestion. It is also sufficiently rare that people will want to build older versions that placing the instructions for that in a less direct linked place very sensible.
