Update server dependencies #64

pip, npm and node could all do with an update

I installed nvm and updated node to 18.17.1 but got the following error when trying to update npm:

node: /lib/x86_64-linux-gnu/libc.so.6: versionGLIBC_2.28' not found (required by node)`

Reverted back to 16 for the time being and will take another look later
