Support for Gateway APIs v0.8.1 #236

The purpose of this PR is reworking support from Alpha1 to Beta1

While I'm not sure this is the best way, as it essentially forces users to upgrade their CRDs to the latest, it works.

If you have a better propostion, i'm all ears :)
