Reconcile catchment definition files #172

We have several, largely redundant files defining catchments. Consolidate these and include better documentation within the data dir to explain when each file is useful.

This might require some further testing to see if the more minimalist files in data/catchments yield high accuracies.

Probably best to go with the single file for all catchments approach rather than the directory with one file per catchment
