The bug has been reproduced. To reproduce this issue, adjust the appropriate configurations for trip recording and enable recording with a logging interval of 2 seconds. Save the track and check the interval by viewing the file in a text editor.
As a result, the interval was greater than 2 seconds. In my case, it was 6-8 seconds.

I have record two track with with General logging interval set to 2 sec and 30 sec. It seems that 2 and 30 seconds is minimum logging interval, points are added to the track:
min 2 sec and more
min 30 sec and more
We need to rename option to Minimum logging interval
