playback.launch.py does not exist #695

In VRX classic, our replay_trial.bash script in vrx-docker ran a launch file called playback.launch. Currently there is no analogous launch file in VRX 2.0+ so we need to create one.

On further inspection, the previous playback.launch file was unnecessary. It can be replaced by a direct call to gz sim.
