Add a definition of GitOps #82

Clyde Seepersad suggested that it'd be wise to add a definition of GitOps, in case people didn't know what it was. We have a section tailor-made for that information, and clearly security issues are relevant, so let's add that definition!

I see no disagreement. Let's add this. GitOps is a thing, and it's good to include it to make sure people see its connections.
