Better to use one container per service and use docker-compose to orchestrate these containers

It depends. The main purpose of this project is to provide easy and fast way to develop and set up OSTIS-based systems at any OS with minimal configuration and pre-installed dependencies. There are some ideas about using docker-compose in another projects.
