Update ArchivesSpace Image to v3.4.1 #1

ArchiveSpace v3.4.1 is out. Lets update before we start locking down versions

Looks like we need to go back further first to migrate, and then move versions forward. Currently using v3.1 image NOTE: The Archon migration tool will only work up to ArchivesSpace version 2.6.0. So, if you want to go to a version higher than 2.6.0, do the migration into version 2.6.0 and then upgrade from there. https://github.com/archivesspace/archon-migration
