Reifies https://github.com/degrowth/idn-website/pull/8
This adds more documentation to the README and returns to pulling the theme from upstream.
Instead an overlay for the i18n/en.yml file is provided, which contains the change that we had forked the theme for (before https://github.com/degrowth/idn-theme/commit/9d888b0e872bfe3719865d2d23eba7ffae31a67d).
